Cleanse Day 1 – Lemony Carrot, Ginger and Coconut Soup

There is no particular reason why I decided to start my cleanse in the evening.  I guess I liked the idea of starting a new day after a 12 hour fast.

The morning was spent prepping my cupboards and fridge.  All set and no temptation in sight 🙂

Now to flush out those toxins.  Here goes ~

The following recipe is very easy and what makes it so fabulously satisfying is the ginger and lemon which adds a beautiful depth of flavour to this soup.

The Ingredients

Ingredients for Carrot and Ginger Soup

The Soup (makes 4 servings)

What’s in it?

1 Tbsp coconut oil

1 large red onion, chopped

2 lbs carrots, peeled and diced

10 cloves of garlic

1 1/2 inch ginger

1 Tbsp ground cumin

1 tsp ground cinnamon

1/4 tsp Himalayan salt

4 cups of vegetable broth (yeast free)

Juice of 2 small lemons (1 if you like a more mild taste of lemon)

1 cup coconut milk


heat a large saucepan over medium heat
add the onions and saute until translucent
add the garlic, ginger, cumin and cinnamon cook for 2-3 minutes more
add the carrots, stir and coat for another 4 minutes
add the broth, cover and reduce to low heat for 30 minutes or until the carrots soften
puree then stir in the coconut milk, salt and lemon
re-heat slightly then serve in warm bowls.
